Community gatherings often need to feed many members. Here is an excellent recipe for Feast Soup to serve at the next large get-together. This recipe is intended for 14 tables plus a head table and is meant to feed 124 people.
For this recipe, you require 8 large pots, a plastic dipper strainer, and the following ingredients:
150 lbs blade meat – cut into small cubes
25 lbs soup bones – saw large bones in half
8 handfuls of salt
75 lbs potatoes – cut into small cubes
25 lbs onions – cut small
25 lbs carrots – cut small
5 heads celery – cut small
Instructions:
Put the soup on around 1–2 pm.
Fill each pot 2/3 full of diced meat, divide the bones equally between pots, and add a handful of salt to each pot.
Use a plastic dipper strainer about 6–8 cup in size, and half of the potatoes (add the remaining potatoes two hours before serving).
Add water, and bring the meat and bones to a boil.
Once boiling, add all the veggies and more water.
Add the remaining diced potatoes at 3 pm.
Skim fat as the soup simmers.
Keep simmering until serving time at 5 pm.
As the soup simmers, set out the following:
